Following Optician’s coverage of John Ferrier last week (30.11.18), a reader got in touch to ask whether he had any tips on ‘how to make a nice thick and creamy porridge?’
True to his cause, Ferrier got straight back in touch: ‘In a small saucepan bring the oats (1/2 cup), milk (1/2 cup) and water (1 cup) to a boil – stirring gently all the time.
‘Once the mixture boils and begins to thicken, turn down the heat and simmer for about 10 minutes (add a good pinch of salt after five minutes). When you get the perfect creamy consistency, turn off the heat and cover with a pot lid for about five minutes. Now cooled to perfect eating temperature, enjoy your porridge as it is or with any topping you fancy.’
